This morning, we departed our lodgings in Port Askaig and drove to the southern part of the island entailing a trip taking about 45 minutes in course of which we encountered peat cuttings. For those familiar with Islay whisky, peat is a key ingredient of the malting process and gives the spirit a smokey flavour.
